RECIPES: MATZAH BALLS

Matzah balls are a great part of a Sabbath or Pesach meal. These are great simmered in your favorite broth—chicken flavored, onion, mushroom or vegetable. This recipe makes half dozen golf-ball-sized balls or twelve smaller ones.

Matzah BallsIngredients

• 2 large eggs, beaten lightly
• 3/4 cup matzah meal (or very finely crumbled matzah crackers)
• 1/8 cup margarine
• 1 teaspoon salt or powdered broth flavoring/ soup mix (use 2 if boiled in bland broth)
• 1/8 cup hot water
• 4 or more cups of salted broth (chicken flavor, onion, or vegetable)

Directions

1.In a medium bowl, mix the eggs and margarine together.
2.Stir in matzah meal and salt.
3.Add hot water.
4.Mix well. Let stand for 15 minutes.
5.With oiled hands, form balls approximately golf ball size or 1 1/2 inches in diameter. (Add more liquid if dough is not moist enough, or add more meal if too moist).
6.Carefully drop balls into boiling broth. Cook 15 minutes on a medium boil.
