RECIPES: MATZAH LASAGNA (DAIRY)

Ingredients

• 1-16 oz bottle of Spaghetti sauce or marinara
• 1/2 pint cottage cheese
• 1/8 teaspoon oregano
• 1 cup canned corn
• 1/2 cup black (mild) olives
• 6 whole matzah crackers dampened with warm water
• 2 cups mozzarella cheese, grated
• 1/2 cup Parmesan cheese, grated

Variation

• 1/2 cup canned mushrooms may be added
• 1 cup vegetarian meat substitute may be added
• Stir ingredients together for more texture instead of blending (see next)

Directions

1. Put marinara sauce, corn, olives, cottage cheese, oregano (and mushrooms if desired) into a blender.
2. Blend until smooth.
3. Combine mozzarella and Parmesan cheeses together.
4. Line 9 x 13 casserole dish with sauce 1/4 inch deep. Spread evenly.
5. Cover with single-layer matzah crackers broken into strips, as you would use lasagna noodles.
6. Spread sauce on this layer 1/4 inch deep.
7. Sprinkle a layer of mozzarella and parmesan cheeses (and vegetarian meat if desired).
8. Add another layer of matzah crackers.
9. Spread with sauce as before and then cheese.
10.Repeat until dish is full.
11.Bake at 350 for 45 minutes.
12.Serve hot.
