RECIPES: CHAROSET (PAREVE)

Ingredients

• 6 tart apples—peeled, cored, grated
• 3 teaspoons honey
• 1/2 cup raisins
• 1/2 cup grape juice (use this for soaking the raisins)
• 1 teaspoon ground cinnamon
• 1/8 teaspoon ground allspice
• 1/2-3/4 cup chopped nuts (walnuts, almonds or pecans)
• 1/2 cup raisins (soaked in the 1/2 cup grape juice / wine)

Variation

• 1/4 cup pomegranate juice can be used for the grape juice for the raisin soak
• 1/2 cup dried cranberries can be substituted for raisins
• 1/4 cup finely chopped apricots add more color

Directions

1. Soak raisins until puffy. Heating the raisins and juice in the microwave or stovetop may accelerate this process.
2. Mix grated apples, honey, juice, raisins, cinnamon, allspice and nuts together.
3. Refrigerate until use.
4. Stir before serving. The type of apples used will dictate the moisture of the mix. If it is too wet, drain off some of the excess liquid. If too dry, add a bit more fruit juice.
5. Serve cold.
